Earlier today[0] I filed the wishlist bug[1] to get the wrapper
updated, and it's already closed (and getting uploaded to
unstable). The control file didn't have java7-headless as an option so
that was included in my patch (default-jre-headless and
java6-runtime-headless were added as alternates by me back when I filed
the wishlist "please update the wrapper" bug in the Debian BTS
earier this year).

Since it has been uploaded to unstable, once it trickles down to jessie
(or wheezy-backports) the openjdk-7-jre package can be changed to
openjdk-7-jre-headless which should save a bit more space on the ISOs.
(OpenJDK7 probably won't be pulled in automatically until Jessie).

[0] It took awhile because I wanted to make sure I had everything
done correctly (with as little work needed for the DD as I could
    manage). Now...hopefully the non-x86 systems that I can't test don't
    FTBFS.
