Update with my Solution at the end:

--On a MacBook Pro 11,3--

The procedure of:

1) Image Alpha iso in OSX using perl isohybrid.pl [uefi-iso]
2) sudo dd if=[uefi-iso] of=/dev/(r)disk[#]
3) Boot newly imaged USB of Alpha
4.) Insert Beta USB target USB
5.) Using Tails Installer, Install Tails on Beta USB

ERROR:
    Continues to fail for:
        tails-i386-feature_uefi-1.1-20140512T1451Z-2947c63.iso
        tails-i386-feature_uefi-1.1-20140512T0748Z-2947c63.iso
        tails-i386-feature_uefi-1.1-20140511T1456Z-2947c63.iso


        I attempted using all three options on the Tails
        Installer, none would work.




***Workaround (Requires 1 additional USB or unessary extra download
traffic over tor network):***

1) Boot into OSX
2) Download tails-i386-feature_uefi-1.1-20140510T0745Z-2947c63.iso
3) # perl isohybrid.pl
tails-i386-feature_uefi-1.1-20140510T0745Z-2947c63.iso
4) Insert target Alpha USB
5) #diskutil unmountDisk /dev/disk[#]
6) sudo dd if=tails-i386-feature_uefi-1.1-20140510T0745Z-2947c63.iso
of=/dev/disk[#]
7) Boot Alpha of tails-i386-feature_uefi-1.1-20140510T0745Z-2947c63.iso
8) Create Beta of
tails-i386-feature_uefi-1.1-20140510T0745Z-2947c63.iso using Tails
Installer.
9) Remove Beta USB

**10) Insert Gamma USB
**11) Install Tails to Gamma USB from Alpha USB Tails Installer in the
Same Manner as we just installed it to Beta USB.

12) Shutdown Tails Alpha USB
13) Confirm that both Beta & Gamma USB's EFI boot.
14) Boot into OSX
15) Download tails-i386-feature_uefi-1.1-20140512T1451Z-2947c63.iso
16) Insert Alpha USB, Use DiskUtility, repartition, erase, & reformat
drive to FAT--we'll name the new partition 'TRANSFER'.
17) Copy (as in drag-drop, not image/dd)
tails-i386-feature_uefi-1.1-20140512T1451Z-2947c63.iso onto TRANSFER
18) Eject TRANSFER, Remove USB
19) Power OSX off
20) Insert Tails Beta USB, Boot & Configure Persistence for Files
21) Insert TRANSFER USB, copy
tails-i386-feature_uefi-1.1-20140512T1451Z-2947c63.iso from TRANSFER to
Tails Beta USB Persistence.
22) Eject & Remove TRANSFER USB
23) Insert Gamma USB
24) Launch the Beta USB Tails Installer
25) Select Upgrade from ISO
26) Browse to & select the
tails-i386-feature_uefi-1.1-20140512T1451Z-2947c63.iso that we just
copied to Beta USB's persistence.
27) Select Gamma (/dev/sd#) from Target Device List
28) Select Install Tails *Success*
29) Eject & Remove Gamma USB
30) Poweroff Beta USB Tails, remove USB
31) Insert Gamma USB & Boot Tails from Gamma
32) Select Applications-->Tails-->About Tails
33) Confirm: 
    Build information:
    1.1 - 20140512
    2947c63515e71473a4ff33772b07cea1799c3479
    live-build: 3.0.5+really+is+2.0.12-0.tails1
    live-boot: 3.0.1-1
    live-config: 3.0.23-1
34) Gamma USB Tails Installer can now be used to Clone & Upgrade Beta
USB.
